A miller looks at three numbers in bread wheat: protein, hectolitre weight and gluten. We measure all three on every lot and attach the result to the shipping papers. Sunn-pest damage is declared separately.
Feed wheat is judged differently, on hectolitre weight and foreign matter. We keep the two grades apart in store and never blend them.
