Buyers of dry beans look at three things: seed size, colour uniformity and cooking time. Every lot we buy passes a sizing screen; broken, stained and shrivelled seeds are removed.
Dermason and sugar beans come from Central Anatolian growers, cranberry beans from the Black Sea belt. Nothing enters storage above 14% moisture, and stores are monitored regularly against insect risk.
